Chickpea Salad
INGREDIENTS
2 Cans of Garbanzo Beans
3 Celery Stalks Chopped
1 Handful of Chopped Dill
2 Green Onions Chopped
1/4 Cup Red Wine Vinegar
1/2 Cup Mayo (or Vegan Mayo)
1 TBL Dijon Mustard
Pinch of Salt, Pepper, Celery Salt, and Cayenne Pepper
DIRECTIONS
Chop celery, dill, and onions
Combine the mayo, mustard, vinegar, and seasonings in a bowl
Mix the chopped ingredients with the chickpeas, then add in the seasonings
Enjoy on its own, in a sandwich, wrap, or pita! You can also slightly mash the chickpeas to your preferred texture.
