Chickpea Salad

This chickpea salad is delicious and vegan! Prepare a healthy lunch that anyone will love with this easy recipe.

INGREDIENTS

  • 2 Cans of Garbanzo Beans

  • 3 Celery Stalks Chopped

  • 1 Handful of Chopped Dill

  • 2 Green Onions Chopped

  • 1/4 Cup Red Wine Vinegar

  • 1/2 Cup Mayo (or Vegan Mayo)

  • 1 TBL Dijon Mustard

  • Pinch of Salt, Pepper, Celery Salt, and Cayenne Pepper

DIRECTIONS

  1. Chop celery, dill, and onions

  2. Combine the mayo, mustard, vinegar, and seasonings in a bowl

  3. Mix the chopped ingredients with the chickpeas, then add in the seasonings

  4. Enjoy on its own, in a sandwich, wrap, or pita! You can also slightly mash the chickpeas to your preferred texture.
