Zucchini Boats
INGREDIENTS:
2 Zucchinis
1 Cup of Brown Rice
1 Can of Black Beans
1/2 Yellow Onion
Handful of Shredded Cheese (or as much as you like)
1 Red Bell Pepper
1 Green Onion
Salt and Pepper
RECIPE:
Cut each zucchini in half length wise, and cut off the ends. Using a spoon, scoop out the flesh of the zucchinis. Either discard of the flesh or chop up and save for the filling.
In a pan, sauté the peppers, yellow onion, and black beans. Once tender, add in the rice and season with salt and pepper. If you are using the zucchini flesh, then add that in as well.
Lay out the zucchinis on a baking sheet and fill each zucchini boat with your mixture.
Top with cheese and green onions.
Bake in oven at 375 degrees F for 20-30 minutes.
Enjoy on its own, or with some salsa and sour cream!
Skip the cheese to make it Vegan.
