Vegetarian Flautas

Vegetarian Flautas

Enjoy these delicious Mexican treats Vegetarian style with our easy-to-make recipe!

Ingredients:

  • One Can of Vegetarian Refried Beans

  • One Package of Small Tortillas - Corn or Flour

  • Shredded Mexican Cheese - We used Vegan

  • One Package of Vegan Ground Meat 

  • 2 Tbsp of Chili Powder

  • Olive Oil

Topping Ingedients:

  • 2 Avocados

  • 1 Head of Romaine or Iceberg Lettuce

  • 2 Avocados 

  • 1 Large Tomato

  • Salt and Pepper

Directions:

  1. Coat pan with olive oil and Sautee Vegan Chopped Meat in a pan with 1 Tbsp Chili Powder

  2. Prepare Flautas by laying tortillas out on a flat surface

  3. Spread Refined Beans with a spoon on half of the tortilla focusing on the edge so they will stay together when you roll them

  4. Add Vegan Chopped Meat to Flautas - do not overfill as it will be harder to roll them up

  5. Add Vegan Cheese to each Flauta 

  6. Roll Flautas up tightly - If they don’t stay together, add more Refined Beans to the edges so they stick better

  7. Heat a skillet with Olive Oil on high heat ( we use a cast iron skillet) Add some chili powder to the surface of the skillet

  8. Place rolled Flautas in skillet and sprinkle some Chili Powder on top of Flautas and cook on both sides until the Cheese is melted and outsides are browned and crispy - You can also choose to bake in the oven after and top with more cheese.

  9. Prepare the topping - Chop Lettuce and place to the side

  10. Chop Avocado and Tomato and place in a bowl. Season with Salt and Pepper 

  11. Top Flautas with Sour Cream, Lettuce, and Avocado Tomato mixture and Enjoy!
