Key Lime Pie with Chocolate Almond Crust
Key Lime Pie Ingredients:
1 Cup of Key Lime Juice
2 tsp of Lime Zest
28 Ounces of Sweetened Condensed Milk
3 Egg Yolks
Chocolate Almond Pie Crust Ingredients:
1 Cup of Almond Flour
1/4 Cup of Sugar
6 Tbsp of Softened Unsalted Butter
1/4 Cup Ground Almonds
1/4 Cup of Shredded Coconut
1 Cup of Chocolate Chips
Key Lime Pie Topping:
1/3 Cup Shredded Coconut
Zest of 1 Lime
2 tsp Coconut Oil
Recipe:
Preheat oven to 375 Degrees F
In a Food Processor, combine all Crust ingredients until formed a dough-like texture
Butter a pie dish and spread in the dough on the bottom and up the sides. Bake until lightly golden and then chill in the refrigerator
Whisk together the Pie ingredients until evenly combined, and then add to the chilled Pie Crust
Bake for approximately 20 minutes, until it is set on the edges and slightly jiggly
Let it cool to room temperature
Prepare topping: Melt Coconut Oil in a pan on medium heat, add the Shredded Coconut and toast until lightly golden. Make sure to continually stir the coconut so it does not burn. Combine it with your Lime Zest and sprinkle on the pie.
