Coconut Shrimp

Try this delicious and easy recipe for a flavorful, slightly healthier coconut fried shrimp!

Ingredients:

  • 1 pound Peeled and Deveined Fresh Shrimp

  • 2 Eggs

  • 1 Tbsp Milk of your choice - preferably Coconut Milk

  • 1 Cup Shredded Unsweetened Coconut

  • Coconut Oil - amount depending on pan size

  • 1/4 Cup Flour - preferably Coconut Flour

  • Orange Marmalade of Trader Joes Mango Chutney Sauce

  • Salt and Pepper

  • 1 tsp Garlic Powder

  • 1 tsp Ginger Powder

Directions

  1. If you are using frozen shrimp; defrost, rinse, and dry it.

  2. Lightly season Shrimp with Salt

  3. Whisk milk and eggs in a bowl

  4. Combine Coconut Flakes, Flour, Ginger, and Garlic in a bowl

  5. Add about 1/2 centimeter of oil to your skillet over medium-high heat

  6. Dip your shrimp in the egg and milk mixture, then coat in your flour and coconut mixture

  7. Once fully covered, place in your heated skillet with tongs. Flip the shrimp once they are golden on the bottom

  8. Once they are golden on both sides, take it out of the pan it let it dry on a paper towel atop a plate or pan

  9. Enjoy with an Orange Marmalade, or our favorite: Trader Joes Mango Chutney Sauce
