Vegetable Broth

Homemade Vegetable Broth

Make the most of your food scraps and make some homemade veggie broth - perfect for any pescatarian, vegetarian, or vegan soup.

Ingredients:

  • Leftover of frozen Vegetable Scraps. This can include ends of broccoli, carrots, asparagus, or string beans, onion and/or garlic skins, etc.

  • 4 Cloves of Garlic

  • 2 Large Carrots

  • 2 Stalks of Celery

  • 1 Whole Onion, cut in half

  • 2 TBSP - 1 Small Can of Tomato Paste

  • Additional herbs you may have

  • Tsp Salt and Pepper

  • 1 Lemon, cut in half

Recipe:

  1. Add all of your vegetable scraps and veggies to a pot and sautee for about 15 minutes

  2. Add 2-3 quarts of water with the additional seasonings and let boil for about 30 minutes

  3. Strain out all of the ingredients and your broth is ready!

  4. Use to make soup, pasta, rice, etc. or freeze to use for later!
