Loaded Vegetarian Sweet Potatoes
Ingredients:
2 Large Sweet Potatoes (for two servings)
1 Heirloom Tomato
2 Avocados
1 Red Pepper
1 Cup Crimini Mushrooms
1/2 White Onion
Salt and Pepper
Red Pepper Flakes
2 Tablespoons Olive Oil
1 Can Black Beans
1/2 Lime Juice
Directions
Preheat oven to 450 degree F
Poke holes in the sweet potatoes with a fork and cover in 1 tbsp olive oil and salt. Wrap in tin foil and bake for 60 minutes or until tender
Chop peppers and mushrooms and sauté in a pan with olive oil, salt, pepper, and red pepper flakes
Mash avocados and add lime juice, salt, pepper, and red pepper flakes
Rinse and drain black beans
Chop tomato and onion
Once potatoes are ready, let them cool slightly then them down the middle and stuff with the ingredients of your choice, and enjoy!
