Pescatarian Cobb Pasta Salad

We transformed the traditional cobb salad to fit the pescatarian lifestyle with Smoked Tuna Jerky. To add even more flavor, we made this a pasta salad, perfect for any summer Barbeque!

INGREDIENTS

  • 1 Container of Pescavore Smoked Ahi Tuna Jerky - flavor of your choice.

  • 1 Box of Banza Chickpea Fusilli - or pasta of your choice

  • 4 Hard Boiled Eggs

  • 1/8 Red Onion

  • 1 Large Tomato

  • 1 Cucumber

  • 1/2 Head Iceberg Lettuce

  • Olive Oil, Red Wine Vinegar, Salt, and Pepper to taste

  • Feta Cheese

DIRECTIONS

  1. Start by boiling your eggs and preparing your pasta.

  2. While the eggs and pasta are boiling, chop all of your ingredients including the onion, tomatoes, cucumbers, lettuce, and the tuna jerky.

  3. Once the eggs are done, peel the shell and chop the eggs.

  4. Strain pasta and then combine all of your ingredients in a bowl.

  5. Top with olive oil, red wine vinegar, salt, pepper, and feta to taste.
