Crustless vegetable and egg quiche
INGREDIENTS
5 Eggs
3/4 Cup Almond Milk or Milk of your choice
One bag of Frozen Vegetables or 2 Cups of Fresh Chopped Veggies (preferably broccoli, zucchini, peas or asparagus) using a mixture of different veggies will make the recipe better
Salt and Pepper to taste
3/4 Cup Shredded Cheese (we used a mixture of mozzarella and cheddar)
DIRECTIONS
Pre-heat oven at 375 degrees
Heat up the frozen vegetables for about two minutes in the microwave. If you are using fresh veggies, make sure they are cleaned and chopped up into smaller pieces
Place veggies into your baking dish
In a medium sized bowl whisk together the eggs, milk, salt and pepper
Add the shredded cheese into your egg mixture
Pour egg mixture over the vegetables in the baking dish
Place in oven and bake for 25-30 min or until eggs are cooked through and slightly brown on top
