Matcha Energy Balls

These delicious and healthy energy balls are perfect for St.Patricks Day! Perfect for a quick snack, breakfast or a healthy dessert, these energy balls are fun and flavorful.

INGREDIENTS:

1 Cup Almonds

1 Cup Pitted Dates

1 TSP Cinnamon

1 TSP Vanilla

1/2 Cup Cacao Powder

1/2 Cup Shredded Coconut

1/2 Cup Rolled Oats

3 Tbsp Matcha Powder

Almond Milk - As Needed

FOR TOPPINGS:

1/4 Cup Shredded Coconut

1/4 Cup Matcha Powder

DIRECTIONS

Combine all ingredients in blender or food processor and combine until well blended. This may take a while. Add almond milk if it becomes too dry. Once it is all fully combined and a thick, soft consistency, form into 1 inch balls. Roll each ball in the combined coconut and matcha powder. Enjoy!
